Bière blanche (in French) or witbier (in Dutch), translatable in both cases as “white beer,” is brewed mainly in Belgium, but also in northeastern France and the Netherlands.
It is brewed partly following the medieval tradition, in which instead of using hops (moreover forbidden in ancient French law) a mixture of herbs and spices known in Dutch as gruut was used: in the modern recipe this is composed of coriander, orange, bitter orange and hops. This mixture gives the beer a fruitier, more tart flavor than its German counterpart, and is very refreshing in summer.
